On a single Vienna street, a tavern that’s been serving locals since 1858 now sits cheek-by-jowl with a Michelin three-star restaurant ranked among the world’s top 50. To celebrate May’s season of gastronomy, Vienna’s tourism board has unveiled a citywide culinary map.

To trace Vienna’s culinary roots, head to GmoaKeller, a Beisl (traditional tavern) that opened in 1858. Its signature, Tafelspitz — tender boiled beef reportedly favored by Emperor Franz Joseph I — is served in a clear, savory broth with a bright apple-and-horseradish sauce. Looking to break with tradition? Two Bib Gourmand spots shake things up: Rosi Beisl, run by a former three-star Michelin chef and focused on bold, seasonal Austrian vegetables, and Tante Liesl, an intimate neighborhood Beisl beloved for its mushroom goulash and classic Viennese schnitzel.

Vienna is unique among world capitals: roughly 600 hectares (about 1,483 acres) of vineyards lie within the city limits. You can hop the subway to reach urban vineyards and sample Wiener Gemischter Satz, a white wine made from grapes grown right in the city, at a Heuriger (new-wine tavern). Nearly 15% of Vienna’s area is used for agriculture, and Augarten City Farm cultivates rare herbs like wasabi arugula and edible flowers. Even the rooftops are productive—about 200 million bees at the State Opera, City Hall and major hotels produce honey that appears on breakfast menus and in souvenir jars.

When it comes to fine dining, Steirereck in Stadtpark reigns supreme. This Michelin three-star restaurant, ranked among the world’s top 50, is known for a dramatic tableside dish called “trout in wax,” where hot beeswax is poured over the fish to cook it. This year, vegan fine-dining newcomer JOLA earned a Michelin star, and Herzig—celebrated for reinterpreting Austrian flavors with a contemporary twist—has also been turning heads.
