Vietnam’s vegetarian pho, pho chay, just landed on TasteAtlas’s “100 Best Vegan Dishes in the World.”
In the April 15 update of its global vegan list, TasteAtlas ranked pho chay 35th. In a May 16 update focused on Southeast Asia, it climbed to 3rd place, behind Indonesia’s tempe goreng and ketoprak.
Pho chay is the plant-based take on Vietnam’s iconic noodle soup. TasteAtlas notes the broth relies on mushrooms, ginger, onions, soy sauce and spices rather than meat. Typical toppings include bean sprouts, tofu, mushrooms and chiles, and some regional versions add carrots, bok choy or even apple.
The ranking highlights how plant-based eating is moving beyond trendy meat substitutes and new products into traditional cuisines worldwide. Pho chay flips pho’s usual meat-forward formula, putting vegetables, mushrooms and aromatics at the center.
TasteAtlas frames its list as a user-driven guide: through April 15 it recorded 27,272 ratings for the 100 Best Vegan Dishes and accepted 14,994 of those as valid. The site stresses the list isn’t a final verdict on global food but a way to promote regional dishes and spark interest.
Vietnamese favorites like pho, banh mi and fresh spring rolls are already widely loved in the U.S. As plant-based riffs on classic dishes—like vegetarian pho—gain attention, they could widen vegan options for both restaurants and diners.
