‘Palgok Garden’ specializes in mountain-vegetable dishes made with organic vegetables grown on-site. Located on the outskirts of Ansan, it’s easy to visit thanks to ample parking. The leafy greens—started by the owners because they didn’t trust market produce—are exceptionally fresh. Side dishes of seasoned greens are available at a self-serve refill bar, so portions feel generous. The grilled fish and duck bulgogi served as mains are standout choices.

Sangchunjae on Jeju is run by a former Blue House chef who served three presidents. The menu focuses on seasonal ingredients in both bibimbap and stone-pot rice. Standouts include a Jeju-style black-pork stone-pot bibimbap seasoned with red soybean paste and a Tongyeong sea pineapple (meongge) bibimbap that brings the ocean to the bowl. Every side dish is neatly presented and very fresh; adding the perfectly grilled mackerel makes the meal even more satisfying.
