In its simple, restrained seasoning the ingredients’ natural flavors shine through, making it a deeply satisfying, warming meal. It’s the dish many people think of when they want to recharge. Chowon’s House in Seongnam opened at the entrance to Namhansanseong in 1977. After decades of refinement, the restaurant is known for its signature nurungji (scorched rice) baeksuk. They use high-pressure, high-heat cooking to achieve ultra-tender chicken and a broth that deepens the longer it simmers. Their house-made 100% glutinous rice nurungji blends with the stock for a deeply layered flavor. The clean, roomy dining area is ideal for groups — and if you reserve ahead, your meal can be ready the moment you arrive.

Bullochon Restaurant in Cheongsong offers a variety of chicken dishes, with its standout being dak-bul-baeksuk — a combo of dak-bulgogi and baeksuk. Finely chopped chicken breast is marinated in gochujang, soy sauce, pepper, and other seasonings for a day, then grilled over a rack. The result is a gentle smokiness with a pleasant spicy kick. Their large chicken legs, simmered with mung beans, make for a deeply savory, comforting baeksuk.

Geumdonggul Restaurant in Haman serves baeksuk inside an old gold-mine cave. The site operated as a gold mine for more than 50 years during the Japanese colonial era; after it closed, the owners opened the restaurant. While the mine is no longer active, the cave still contains trace elements of gold that the proprietors say create a mineral-rich, refreshing atmosphere. Their large native chicken is simmered until tender, yielding a clean, refreshing broth and satisfyingly chewy meat. Finishing the meal with the chicken porridge down in the cool cave feels instantly restorative.

Junghwa Garden in Hoengseong is known for its black-garlic baeksuk — a perfect energy-booster for hot summers. They flavor their hearty restorative dishes with house-made black garlic and natural seasonings. The signature black-garlic herbal haeshintang combines a large native chicken with abalone, octopus, shrimp, more than ten medicinal herbs, mushrooms, and black garlic to create a rich, healthful broth. After finishing the tender chicken, they turn the remaining stock into porridge — a surefire way to recover your energy in the heat.
