MinCook Dashima in Goyang refuses to compromise on ingredients. Open since 2001, it was the city’s first sushi restaurant and has been recognized as a master house in Japanese cuisine. Guided by the belief that great ingredients make great chefs, they store rice milled within five days in a dedicated rice-aging room and cook it with Jeju Samdasoo water. Sushi is prepared fresh each morning so the rice and toppings harmonize beautifully. A thick, tender Jeju black pork cutlet is also a popular dish—pairing it with sushi makes for a satisfying, complete meal.
