Myeonsarang’s ‘Katsu Udon’ applies a high-hydration dough aging process that involves adding a lot of water and investing sufficient time in aging, along with a hand-pulled and hand-beaten noodle-making method. This results in udon noodles with a characteristic soft yet chewy texture.
The broth includes a soup stock made by directly simmering katsuobushi, kezuribushi, and premium kombu from Wando. Additionally, through a rapid freezing method that freezes fresh ingredients as they are, the noodles maintain their elasticity even after cooking. The taste and quality are preserved even with long-term storage.
It’s a frozen noodle meal kit with an all-in-one pack configuration containing noodles, sauce, and toppings. It can be prepared in about 3 minutes using boiling water or a microwave without any separate thawing process. Various additional ingredients can be added according to preference.
