Unlocking Profits: The Impact of Mexicana Chicken’s Digital Strategy and AI on Franchise Success

Mexicana, the company behind Mexicana Chicken, is teaming up with IT solutions provider FoodTech to kick off a digital transformation across its stores and sharpen operations with data-driven tools.
The two signed a memorandum of understanding on the 18th at Mexicana’s headquarters in Gangnam, Seoul. The ceremony was attended by Mexicana CEO Lee Ju-se, FoodTech CEO Choi Jun-young, and company officials.
As part of the agreement, FoodTech’s digital platform mate will be rolled out to every Mexicana Chicken location. The initiative starts with a switch to the Mate POS—a one-stop system that brings orders, sales, settlements and coupons into a single dashboard. From there, the rollout will include customized in-store tech: table ordering, QR ordering and waitlist features, plus kiosks, DID and KDS. By streamlining the flow of orders and service, Mexicana expects smoother operations, faster turnover, happier customers and higher sales for franchisees.
They’ll also introduce Fran:D, an AI-powered franchise sales analysis tool, to standardize support and operations using real operational data. Fran:D converts POS data into structured AI reports—sales breakdowns, menu performance comparisons, store-level KPI summaries, QSC monitoring and decision-support briefs—automating tasks headquarters previously handled manually. Standardized metrics across brands and locations should reduce confusion when interpreting numbers, enabling headquarters and franchisees to move faster on promotions, menu tweaks and other strategic decisions.
FoodTech processed more than 500 million delivery and in-store orders last year. The company is expanding development around the Mate POS to include in-store programs like table and QR ordering, positioning itself as a full-service tech partner for restaurants. Recently, it has continued rolling out data-focused features—such as AI-enabled POS updates—that are rare in the F&B market.
